101 Ways to Cook Fish- #2: Zesty Tomato Cod

This is the second time I made this dish. It is definitely a hit in our house. Both times A has had 2 servings. 
It is delicious and best yet....simple!

Ingredients
-1 large cod (or other white fish) fillet
-zesty Italian dressing
-1 large tomato thinly sliced
-Tomato basil feta cheese

Place tomato slices along entire length of fish. Coat fish and tomatoes with about 1/2 cup of Italian dressing. Season with salt and pepper. Bake at 350 for 20 minutes or until fish flakes easily. In last 5 minutes of cooking sprinkle tomato-basil feta cheese on top of fish and finish baking.
